Congo pepper, Trinidad_small

Of the many culinary travel expeditions Mary Jane and I have taken, one of the most memorable was our trip to the country of Trinidad & Tobago in August, 1992. Above, a Congo pepper in Mary Jane’s hand. I cut it open to remove the seeds and the resulting fumes drove us out of our hotel room for hours.
