Above, where can you find fresh Chilaca chiles (when dried they are called Pasilla) all year long? Also available from this company all year long are fresh Cayennes, Banana Wax, Habaneros, Koreans, Pimientos de Padrón, Poblanos (in California produce terms, incorrectly called “Pasilla”), Serranos, Shishitos, Thais, and Yellow Wax chiles. All of these fresh varieties are available by mail order from Melissa’s Specialty Produce in City of Industry, California. Several years ago I took a guided tour of their gigantic warehouse and they carry the strangest collection of fruits and vegetables I’ve ever seen, most of which I could not identify. They also have an excellent chile pepper cookbook.
